Grilled Vegetable Stacks

Cook time: 15 minutes
Serves 4 people

Ingredients

  • 1 Large Zucchini
  • 1 Large Eggplant
  • 1/2-3/4 cup fresh Ricotta
  • Chopped Spinach to taste
  • Freshly grated Parmesan and Romano
  • 1 egg
  • Garlic powder to taste
  • Chopped FRESH tomatoes

Directions

  1. Slice veggies lengthwise and grill

  2. Mix Ricotta, egg, spinach, garlic and cheeses in a bowl

  3. place a layer of eggplant in a roasting pan

  4. Spread a thin layer of the cheese mixture on each sliced

  5. Top with a layer of zucchini

  6. Spread another layer of the cheese mixture

  7. Sprinkle with chopped tomatoes and some parmesan

  8. Bake in a 350 degree oven until browned
