Zucchini-Garlic Pasta

Ingredients

  • 1 (16 ounce) package wagon wheel macaroni
  • 1/2 lb bacon, diced
  • 1 onion, chopped
  • 4 -6 cloves garlic, minced
  • 3 medium zucchini, halved and sliced
  • salt
  • 3 tablespoons lemon juice
  • 1/2 cup grated parmesan cheese

Directions

  1. Prepare pasta according to package directions.

  2. In a large skillet cook bacon over medium heat until crisp.

  3. Remove bacon to drain on paper towel lined plate; discard all but 2 tablespoons of drippings.

  4. Saute onion and garlic in bacon drippings for about 3 minutes or until tender.

  5. Add zucchini and salt; saute about 6 minutes or until tender.

  6. Drain pasta and add to zucchini mixture.

  7. Add lemon juice and bacon; toss well.

  8. Pour into a serving bowl and sprinkle with parmesan cheese.
