Shrimp Fusilli

can also use chopped cooked chicken instead of shrimp

Ingredients

  • 375g fusilli or other short pasta
  • 500g vegetable mix
  • 1/4 cup flour
  • 3 1/4 cup milk
  • 1 package frozen cooked peeled shrimp
  • 1/3 cup basil pesto
  • lemon juice

Directions

  1. cook pasta; then add vegetable and cook for 1 minute; drain and return to pot

  2. on medium-high microwave 2 1/4 cup of milk; whisk flour into the remaining cold milk

  3. add hot milk to pasta and veggies and gradually stir in flour mixture; cook over medium heat for 4 minutes; stir in shrimp and pesto and cook for 1 minute

  4. season with salt, pepper and lemon juice
