Tortellini with Roasted Cauliflower and Tomatoes

Serves 4 people

Ingredients

  • 4 cup cauliflower
  • 4 cloves garlic
  • 2 cup cherry tomatoes
  • 1 tbsp melted butter
  • 1 package of tortellini
  • 2 tbsp flour
  • 1/2 tsp dried thyme or basil
  • 2 cup milk
  • parmesan

Directions

  1. preheat oven to 450F

  2. toss cauliflower, tomatoes, garlic and butter evenly on a baking sheet and roast for 20 mins, stirring twice

  3. cook tortellini and drain

  4. whisk flour, thyme and 1/4 tsp each salt and pepper into the milk; pour into pasta pot and bring to a boil over medium heat, whisking constantly

  5. reduce heat and cook for 3 minutes; remove from heat and stir in remaining vegetables

  6. add to top of tortellini and sprinkle with parmesan
