Sweet, hot pickles

Ingredients

  • several pounds of pickling cukes. 2 pounds makes about 3 pints and requires the brine below. Scale up the brine as needed.
  • 1 pt vinegar
  • 1 cup sugar
  • 1/3 cup non iodized salt
  • garlic cloves, halved
  • dill, fresh or seed
  • hot peppers
  • peppercorns

Directions

  1. Soak the cukes in ice water for 4 hours

  2. Combine the vinegar, sugar, salt, and garlic in a pot. Bring to a boil and stir to dissolve completely.

  3. In each pint jar, place a bunch of dill, 5 – 10 peppercorns, at least four garlic clove halves, and a halved hot pepper.

  4. Slice the cukes and cut into chunks if needed to make them fit in the jars. Pack tight!

  5. Pour hot brine over, leaving 1" of space at the top of the jar.

  6. Process 15 minutes in a boiling water bath, or just jam them in the fridge.
