Crunchy Ranch Fingers

Ingredients

  • 1 cup cornflake crumbs
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/3 cup light buttermilk ranch salad dressing
  • 1 tbsp. water
  • 12 oz. chicken breasts, boneless, skinless

Directions

  1. Preheat oven to 425 degrees.

  2. Cut chicken into bite-size pieces.

  3. Coat a 9×13 baking pan with cooking spray and set aside.

  4. In a shallow dish, combine cornflake crumbs, salt and pepper. In another shallow dish, stir together the 1/3 cup salad dressing and the water.

  5. Dip chicken strips into the dressing mixture, allowing excess to drip off; dip into crumb mixture to coat. Arrange strips in prepared pan.

  6. Bake in 425 degree oven for 12 to 15 minutes or until chicken is no longer pink.

  7. Serve with additional dressing.
