Smashed Sweet Potatoes With Dried Cranberries

Ingredients

  • 4 large sweet potatoes, peeled and cut into 1/2-inch thick slices
  • 1/2 cup apple juice
  • 1/4 cup firmly packed light brown sugar
  • salt
  • fresh ground black pepper
  • 1/3 cup dried sweetened cranberries

Directions

  1. Add the sweet potato slices to a lightly oiled 4-quart slow cooker.

  2. In a small bowl, mix together the apple juice and brown sugar; pour mixture over the potatoes.

  3. Season with salt and pepper.

  4. Cover and cook on LOW for 6 hours, until the potatoes are tender.

  5. Right before servings, smash the potatoes with a potato masher until smooth; fold in the cranberries.

  6. Serve hot.
