Whipped Chocolate Ganache

Ingredients

  • 1/3 cup sugar
  • 3 Tablespoons unsweetened cocoa powder
  • 1 cup cold heavy or whipping cream
  • 1 teaspoon pure vanilla extract

Directions

  1. In a small bowl, toss the sugar with the cocoa and set aside. In a medium sized bowl, whip the cream with an electric mixer on high until the cream thickens and soft peaks begin to form. While the mixer is running, add the sugar-cocoa mixture and then stir in the vanilla.

  2. Continue beating just until the cream turns a light-chocolate colour and stiff peaks just begin to form. Watch carefully and do not overbeat at this stage.
