Pea and mint soup

could also add ham
nice served with a toasted slice of ciabatta with olive oil

Serves 7 people

Ingredients

  • 2 carrots
  • 2 celery stalks
  • 2 medium onions
  • 2 cloves of garlic
  • 1 3/4 quarts vegetable/chicken broth
  • 5 1/2 cup frozen peas
  • fresh mint

Directions

  1. chop the carrots, celery, onions, garlic

  2. put broth until boiling

  3. in a large saucepan over medium heat add the chopped veggies and cook for 10 minutes

  4. add the veggies to the boiling broth and add the peas, allow to simmer for 10 minutes

  5. add the mint leaves and blend the soup until smooth
