spicy coconut tomato soup

Serves 3 people

Ingredients

  • 1 can of light coconut milk
  • 1 28 oz. can of crushed tomatoes
  • fresh basil (a handful, maybe more)
  • 1/2 c. water
  • 2 cloves garlic (minced)
  • 1 tsp. minced ginger
  • red curry paste (to taste)

Directions

  1. On medium heat, heat up water, garlic, ginger, and curry paste in the bottom of a small soup pot.

  2. When it starts smelling really delicious, add the crushed tomatoes, coconut milk, and basil.

  3. Stir everything together and cook it for a while…the longer you cook it, the better it tastes.

  4. Serve with some crusty bread.
