Taco Lasagna

This recipe tasted really good and my girls were able to help me with it. We did put waaaay too much cheese in it though on accident (since they were helping ha).

Ingredients

  • 1 lb. lean ground beef
  • 1 clove minced garlic
  • 1/2 cup onion, chopped
  • 1 envelope taco seasoning
  • 1/4 cup water
  • 1 (15 oz.) can diced tomatoes
  • 1 cup shredded cheddar cheese (lowfat)
  • 4 flour tortillas
  • 1 cup shredded lettuce
  • 1 cup sour cream (light)

Directions

  1. Brown ground beef with garlic and onion. Cook until ground beef is no longer pink, drain.

  2. Add taco seasoning and 1/4 cup water. Let simmer 5 minutes.

  3. Drain tomatoes and add to ground beef.

  4. Spray a 2 quart casserole dish with cooking spray.

  5. Layer: tortilla, beef mixture, and cheese.

  6. Repeat layers until all tortillas, beef and cheese are used, ending with cheese.

  7. ver and bake for 20 minutes at 375.

  8. Top with sour cream and lettuce.
