Chicken Taco Soup

I didn’t know what would be better than my Chicken Tortilla Soup recipe, so I was highly skeptical of this one. I think it’s just as good.. or better! It’s fun to eat because it reminds me of a party because it kind of tastes like a taco dip!

Ingredients

  • 1/2 cup onion, chopped
  • 1 (16 oz.) can black beans, rinsed
  • 1 (16 oz.) can kidney beans, rinsed
  • 1 (14.5 oz.) can corn, drained
  • 1 (8 oz.) can tomato sauce
  • 1 (10 oz.) can diced tomatoes with green chilies (Rotel)
  • 1 envelope taco seasoning
  • 1 lb. boneless skinless chicken breasts

Directions

  1. Mix all ingredients together in a crock pot with the chicken on top. Cook on low 6-8 hours or on high for 3-4 hours. Prior to eating shred the chicken and stir.

  2. You can add sour cream, crushed chips, and cheese to individual bowls.
