Slow Cooker chicken and Dumplings

(from grandmaD’s recipe box)

This recipe is an amazing crock pot meal. I changed a couple things from the original. It was awesome comfort food after a long day… very much like a homemade chicken pot pie feel to it.

Ingredients

  • 4 boneless chicken breast halves
  • 2 tbs butter
  • 1 10.75 oz. can cream of chicken (i did fat free)
  • 1 10.75 oz. can cream of mushroom (i did fat free)
  • 1 onion finely diced
  • 1 package refrigerated biscuit dough torn into pieces
  • 1 can veggies
  • 1 can chicken broth

Directions

  1. Place the chicken, butter, soup, and onion in a slow cooker, and then add chicken broth to cover.

  2. Cover and cook for 5-6 hours on High. Before you add the biscuits cut chicken in chunks or shred. (I liked the chunks). Depending on how doughy you want your dumplings add the biscuits sooner or later. I added mine about 2 1/2 hrs. before being done and they weren’t as doughy as I had done them when I added them an hour before done. I prefer them being slightly more cooked rather than doughy so I like to add it sooner. Cook until the dough is no longer raw in the center.
