Decorator’s Buttercream

Ingredients

  • 4 cups sifted confectioner's sugar
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, at room temperature
  • 1 tablespoon light corn syrup
  • 1 Tablespoon pure vanilla extract
  • 1/4 to 1/3 cup heavy or whipping cream
  • assorted food colours (optional)

Directions

  1. Sift the confectioner’s sugar and salt together in a large bowl.

  2. In another large bowl, cream the butter with an electric mixer on high until light yellow and slightly thickened, about 3 minutes. With the mixer still running, beat in the corn syrup and vanilla. Reduce the mixer to low and beat in the sugar in two additions, beating well after each. Blend in 1/4 cup of the cream all at once until the frosting is spreading consistency, adding a little more cream if needed.

  3. Return the mixer speed to high and whip until light and creamy, about 3 minutes more. If you want different colours of frosting, divide into three or four small bowls. To tint the frosting, add a small amount of colour at first and blend in completely before adding more.
