Turkey Casserole

This was good because I would normally never make something like this. It kind of was reminiscent of Thanksgiving. It’s a nice change from the same old meals.

Ingredients

  • 1 can 98% fat free cream of chicken soup
  • 1/2 cup 1 % milk
  • 1/4 tsp pepper
  • 1/2 lb. Sara Lee oven roasted turkey, diced (you can purchase the turkey in the deli section of the grocery store and ask them to slice it 1/4 inch thick or you could buy turkey and cook it yourself)
  • 2 cups frozen mix vegetables
  • 1/2 cup fresh mushrooms, sliced
  • 3 cups cornflakes cereal, crushed
  • 2 Tbsp margarine, melted

Directions

  1. Combine soup, milk and pepper.

  2. Add turkey, mixed vegetables and mushrooms.

  3. Pour into a greased 8×8 inch pan.

  4. Mix together crushed cornflakes and melted margarine. Spread over top of turkey mixture.

  5. Bake at 350 for 35-40 min. or utnil bubbly.

  6. (You can substitute cooked chicken instead of turkey if you would like.)
