Shrimp and Cheese Tortellini

I invented this from items in the pantry. One can mix ’n match optional ingredients. I like using either basil and grape tomatoes, or peas and scallions. Experiment with other ingredients.

Ingredients

  • One 14 oz. bag frozen shrimp, 41-60 count
  • 3-4 slices bacon, cooked and drained
  • One 19 oz. bag frozen cheese tortellini
  • 1/4 C. fresh basil, chopped (optional)
  • 1/4 C. scallions, chopped (optional)
  • Grape tomatoes, halved (optional)
  • 1/2 bag frozen peas (optional)
  • Fresh parmesan cheese, grated
  • 1/2 jar prepared tomato vodka pasta sauce
  • Salt and pepper to taste

Directions

  1. Bring frozen shrimp and frozen peas, if used, to room temperature by using separate colanders and flushing with cool tap water.

  2. Cook bacon completely in large skillet. Remove, drain and set aside, reserving the bacon grease.

  3. Saute shrimp in hot bacon grease until cooked through. Remove, drain and set aside.

  4. When bacon begins cooking, cook tortellini according to package directions. Drain and return to cooking pot.

  5. Combine tortellini, shrimp and tomato vodka sauce in pot. Stir in optional items. Season with salt and freshly ground black pepper.

  6. Pour into serving dish and top with crumbled bacon and grated parmesan cheese. Serve immediately.
