Pasta in Vodka, Caviar and Smoked Salmon Cream Sauce

Ingredients

  • 1 TBSP (15 ml) extra virgin olive oil
  • 3 TBSP (45g) butter
  • 1 shallot, finely chopped
  • 1/4 cup (60ml) Gray Goose vodka
  • 1/2 cup (120ml) heavy cream
  • Salt and freshly ground white pepper
  • 8 ounces (250g) smoked salmon, cut in thin strips
  • Garnish
  • Dill sprigs

Directions

  1. In a heavy saucepan over medium heat, warm oil and 1 TBSP (15g) of butter and saute shallot until translucent, about 3 minutes.

  2. Deglaze with vodka and reduce by half.

  3. Add fish stock and simmer for 2 minutes.

  4. Add heavy cream, season to taste with salt and pepper and simmer for 10 minutes.

  5. Do not boil.

  6. Remove from heat and whisk in remaining butter a little at a time.

  7. While sauce is simmering, cook pasta in a stockpot of boiling salted water until al dente.

  8. Drain well and toss with olive oil.

  9. Add smoked salmon and pasta to sauce.

  10. Toss to coat, arrange into warmed serving bowls and garnish with dill.
