Mom’s Split Pea Soup

Ingredients

  • 1 pkg. green split peas
  • 1 can vegetable broth
  • 1/2 medium yellow onion, chopped fine
  • 1 grated carrot
  • 1 stalk celery, chopped fine
  • 2 cloves minced garlic
  • Salt and pepper to taste
  • Ham pieces (if desired)

Directions

  1. Add enough water to cover ingredients by at least one inch. Bring to boil and simmer for approximately 2 hours (more if the peas haven’t softened to mush). Add more water to thin soup, if necessary.
