Smoky bacon and tomato soup

Ingredients

  • 1 tsp olive oil
  • 1/2 onion, chopped
  • 2 garlic cloves, chopped
  • 4 slices bacon, chopped
  • 1/2 pint chicken or vegetable stock
  • 2 tomatoes, chopped
  • 2 tbsp tomato purée

Directions

  1. Heat the oil in a pan and gently cook the onion and garlic for 3-4 minutes or until softened.

  2. Add the bacon and cook for a further three minutes.

  3. Pour over the chicken or vegetable stock and add the tomatoes and purée. Cook for five minutes.

  4. With a hand blender, blend the soup until it’s smooth.

  5. Serve warm.
