Teriyaki Chicken Packets

A great recipe for the campfire.

Ingredients

  • 4 whole Chicken Breasts
  • 1 14 oz. can pineapple chunks, drained
  • 2 green peppers, sliced
  • 1 purple onion, cut in chunks
  • 1 package whole fresh mushrooms
  • 1 bottle Teriyaki Marinade
  • heavy duty foil

Directions

  1. Slice raw chicken breasts into bite size pieces.

  2. In large bowl, mix all incredients, including Marinade. Pour into 2 gallon freezer bags to marinate for anywhere from 15 min. to 1 hour (depending upon the directions on the marinade you choose).

  3. Tear off about 12 in. of foil per person. Spoon enough mix into the middle of the foil for one serving. Roll and seal the top and sides securely. Place on heated coils of your campfire or your grill. Depending on the temperature of the heat, depends upon the length of time you need to keep on the coals. Prepare to check every 15 minutes. When the chicken is done, take out of the fire.

  4. I serve this with herbed rice (I’ll include fresh parsley, almond slices, with maybe a little coconut milk or even cilantro depending on what I have on hand.

  5. This is a wonderful recipe to do when camping!! I promise you’ll enjoy.
