Mandarin Orange Chicken

Ingredients

  • 1 lb. boneless, skinless chicken breasts (2 cups), cooked and cut into bite-sized pieces
  • 1 tbsp. vegetable oil
  • 2 cups sliced, fresh mushrooms
  • 2 tsp. all-purpose flour
  • 1 cup water
  • 1/2 6 oz. can frozen orange juice concentrate, thawed
  • 1/2 cup thinly sliced green onion bulbs (without greens)
  • 2 chicken bullion cubes
  • 1 11oz. can mandarin orange sections, drained
  • 1 cup long-grain, uncooked rice

Directions

  1. In skillet, saute mushrooms in oil over medium high heat, stirring constantly. Sprinkle flour over mushrooms, stirring quickly to combine. Gradually stir in water, orange juice concentrate, green onions, and bouillon cubes. Stirring constantly, bring to a boil. Reduce heat, add chicken, and let simmer 3-4 hours. Cool and freeze.

  2. To serve, thaw chicken mixture, and cook rice according to the package directions. Heat chicken mixture in a saucepan until bubbly, stir in drained orange segments and heat through. Combine with cooked rice and serve.
