Manhatten-Style Vegetable Chowder

Ingredients

  • 1 tablespoon vegetable oil
  • 2 cups chopped cabbage
  • 1 cup chopped onion
  • 3 cups water
  • 3 cups vegetable broth
  • 1 (6 ounce) can tomato paste
  • 1 cup sliced celery
  • 1 cup sliced zucchini
  • 1 cup sliced carrot
  • 1 cup diced peeled boiling potato
  • 1/2 cup frozen lima beans
  • 1/2 cup cut green beans (fresh or frozen)
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt (to taste)
  • 1/3 teaspoon pepper

Directions

  1. In a 4-quart pot, heat the oil over med-high heat; add in cabbage and onions; cook, stirring, until softened, about 4 minutes.

  2. Stir in the water, vegetable broth, and tomato paste until combined.

  3. Add the remaining ingredients; bring to a boil; reduce heat and simmer, uncovered, 30 minutes.

  4. *May use corn instead of lima beans.
