Pinkie Pie

Ingredients

  • 4 cups fresh strawberries
  • 1 1/4 cups sugar
  • 1/2 cup water
  • 1/2 teaspoon cream of tartar
  • 3 egg whites
  • 1/8 tsp salt
  • 1 tsp almond extract
  • 1 9" prepared graham cracker crust

Directions

  1. Wash, hull and slice strawberries into quarters

  2. Place sugar, water and cream of tartar in saucepan; bring to a boil over medium heat

  3. Cook, uncovered until a small amount of mixture forms a soft bass when placed in cold water.

  4. Beat egg whites and salt until very stiff.

  5. Stir in almond extract.

  6. Pour hot syrup slowly into beaten egg whites, beating constantly until thick and glassy

  7. Spoon over strawberries in shell. Chill and serve.
