Meatloaf Asian-Style

Ingredients

  • 1 lb ground beef
  • 1/2 lb ground pork
  • 1/2 cup chopped yellow onion
  • 1/2 cup finely chopped celery
  • 1 garlic clove, minced
  • 1 large egg, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground black pepper
  • 3 cups cooked long-grain rice, divided
  • wasabi, for serving
  • Soy-Hoisin Glaze:
  • 1/4 cup soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon ketchup

Directions

  1. Preheat oven to 350°.

  2. In a big bowl, combine all the ingredients EXCEPT 2 cups of rice, the glaze, and the

  3. wasabi; mix well.

  4. Turn the mixture into a lightly oiled 9 × 5 inch loaf pan; gently pat down.

  5. Bake for 45 minutes; meanwhile make the glaze—in a small bowl, whisk the glaze ingredients together.

  6. Spread the glaze on top of the loaf and bake 15 more minutes, until the loaf is firm and the top is lightly browned and the sauce is bubbly.

  7. Let stand in the pan for 5-10 minutes before serving.

  8. Remove the loaf from the pan and slice to serve.

  9. Serve with the remaining rice and wasabi.
