Bok Choy Soup

Use just a shake or two of red pepper flakes.
Use fewer leaves, but include stalks, sliced.
I often double the recipe and add 1/4 to 1/2 cup barley to the chicken broth 45 minutes or so before adding the bok choy.

Ingredients

  • 3 cups chicken broth
  • 10 leaves bok choy, thinly sliced
  • 2 tsp. soy sauce
  • 2 tsp. sesame oil
  • 1 tsp. red pepper flakes
  • 1 garlic clove, peeled and chopped

Directions

  1. Bring the chicken broth to a boil.

  2. Stir in the seasonings (pepper, soy sauce, sesame oil) and the garlic.

  3. Add the bok choy. Simmer for up to 10 minutes, until the leaves are dark green and wilted and tender.
