Vegetable Meatloaf

Can use panko for breadcrumbs.
Can leave egg out.

Cook time: 70 minutes
Serves 6 people

Ingredients

  • 1 lb. ground beef
  • 1 cup soft breadcrumbs
  • 1/4 cup shredded carrot
  • 1/4 cup thinly sliced celery
  • 2 tbsp. finely chopped onion
  • 2 tbsp. finely chopped green pepper
  • 1 egg, slightly beaten
  • 1 tsp. parsley flakes
  • 1/2 tsp. dry mustard
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1-16oz can, whole tomato's, drained and chopped

Directions

  1. Combine all ingredients.

  2. Place meat in a 10 × 6 inch loaf pan.

  3. Bake at 350 degrees for 1 hour and 10 minutes or until done.
