Vietnamese Beef Stew

Ingredients

  • 2 lb beef stew meat
  • 1 tbsp annatto seeds
  • 1/2 cup all-purpose flour
  • 2 stalks lemongrass, bruised
  • 2-inch knob ginger, cut into big slices
  • 1 stick of cinnamon
  • 3 star anise
  • 2 bay leaves
  • 2 tsp Chinese 5-spice powder
  • 2 tsp Ca Ri Ni An Do (Vietnamese Indian Madras Curry Powder)
  • 2 tbsp Nuoc Mam (Vietnamese Fish Sauce)
  • 2 tsp salt
  • 6-oz can tomato paste
  • 2 carrots, cut into 2-inch chunks
  • 3 potatoes or more, cut into 2 -inch chunks
  • Onions, if desired

Directions

  1. Put Beef in Crock Pot

  2. Sprinkle flour over the beef.

  3. Add two bruised lemongrass stalks, ginger slices, a stick of cinnamon, and 3 star anise pods. Also add a few bay leaves, 2 tsp Chinese 5-spice powder, and 2 tsp Ca Ri Ni An Do (Vietnamese Indian Madras Curry Powder). Add onions if desired. Fill the Crock Pot about 3/4 full with water.

  4. Put 1 tbsp annatto seeds in a dish with 1/2 cups water, microwave for a minute to release the color, strain liquid into stew pot.

  5. Add fish sauce and tomato paste.

  6. Cook on high for 2 hours.

  7. Add carrots and potatoes, cook for another 2 hours.

  8. Serve with french bread, rice, or noodles.
