Ingredients

  • 1/4 cup flour
  • 1 tsp kosher salt
  • 2 large eggs, beaten
  • 1 1/4 cups panko (Japanese bread crumbs)
  • 2 firm-ripe medium avocados, pitted, peeled, and sliced into 1/2-in. wedges

Directions

  1. • Slice Avacodo.

  2. • Mix the flour, egg, and panko.

  3. • Place the fries on a drying rack and then on a cookie sheet.

  4. • Spray with olive oil or non-stick spray.

  5. • Bake 20 minutes at 450 degrees.

  6. • Sprinkle with parmesan.
