Smothered Chicken

Ingredients

  • 3 lbs whole cut up chicken (I use 3 breasts, 3 thighs and 3 legs)
  • 2 (5 ounce) packets chicken fry coating
  • 2 tbls salt free chicken seasoning (McCormick Grill Mates)
  • Canola Oil
  • 3 (12 oz) jars chicken gravy
  • 1 tsp crushed garlic

Directions

  1. Cut away excess skin from chicken

  2. Rinse with cold water and set aside, do not pat dry

  3. In shallow bowl, stir together fry coating and 1 tbls chicken seasoning.

  4. Dredge chicken pieces in coating mixture

  5. Set aside

  6. in large straight sided pan, heat 1/2 inch oil over med high heat

  7. Fry coated chicken until golden brown, about 8 mins per side

  8. remove chicken from pan and drain oil

  9. In medium bowl, stir together gravy, remaining chicken seasoning and garlic

  10. Return chicken to pan over medium heat

  11. Cover with gravy, bring to bowl

  12. Reduce heat, cover and simmer for 10 – 20 mins or until completely done
