Healthy Cookies

I can only make these once a week. Otherwise the boys and I sit down and eat the entire batch. Occasionally, I make them with bananas so I won’t eat them.

Ingredients

  • 3/4 c organic salted butter
  • 1/2 c raw sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 1/2 c organic unsweetened apple sauce
  • 1 1/2 c whole wheat flour
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 3/4 cup dried fruit

Directions

  1. u can substitute bananas for the apple but I’m allergic to bananas. Preheat oven to 350. Cream butter and sugar. Add egg, vanilla, and apple sauce, mix well. In another bowl, combine flour, oats, and baking soda. Add to applesauce mixture and mix well. I use an ice cream scoop to spoon out onto cookie sheets – the dough is sticky. Bake 10 – 12 minutes.

  2. I’ve tried leaving the sugar out but then they tasted more like a really good oat muffin. Jamie suggests adding some carob chips in place of the sugar, I haven’t tried that yet. She also says you can add dried fruit, raisins, nuts, etc.

  3. Yields 2 dozen cookies.
