Mini Tuna Casseroles

Ingredients

  • 1/2 cup chopped green onion
  • 2 tablespoons butter or 2 tablespoons margarine
  • 2 tablespoons all-purpose flour
  • 3/4 cup milk
  • 1 (6 ounce) can tuna, drained and flaked
  • 1/2 cup shredded cheddar cheese
  • 1 cup crushed potato chip, divided
  • salt and pepper

Directions

  1. In a medium saucepan, saute the onions in melted butter over medium heat.

  2. Add in flour, stirring constantly to mix; gradually stir in milk.

  3. Bring the mixture to a boil stirring constantly; cook for 2 minutes or until thickened, stirring constantly.

  4. Remove pan from the heat.

  5. Add in tuna, cheese, 1/2 cup of potato chips and salt and pepper to taste.

  6. Pour into 2 greased 8-oz.

  7. ramekins or baking dishes.

  8. Sprinkle with remaining potato chips.

  9. Bake, uncovered, at 350 degrees for 20-25 minutes or until hot and bubbly.
