Banana Bread

Ingredients

  • 1 3/4 C flour
  • 1 1/4 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3 C soft shortening ( I use Take Control or Benecol)
  • 2/3 C sugar
  • 2 eggs (can use egg beaters)
  • 2 TB milk
  • 3 mashed ripe bananas
  • 1/4 C nuts

Directions

  1. Combine flour, baking powder, baking soda, and salt and set aside.

  2. Cream together shortening and sugar. Add eggs and milk, one TB at a time to the shortening mixture and beat well in between.

  3. Mash bananas.

  4. Add dry ingredients and bananas alternately to the shortening mixture. Stir in nuts.

  5. Grease a loaf pan. Bake at 350 degrees for 60 minutes. Cool in pan, on a rack for 10 minutes, then remove from pan.
