Millet Muffins

Using home-milled flour

Ingredients

  • 1 c. soft wheat flour
  • 1 c. kamut flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp salt
  • 1/2 c. oil
  • 1/2 c. honey
  • 1 egg
  • 1 c. buttermilk(I use reg. milk or add 1tbsp vinger to regular milk)
  • 1 ripe mashed banana
  • 1/4 c. millet
  • 1/4 c. oatmeal
  • 1/4 c. flaxseed, ground
  • 1/4 c. chopped walnuts
  • 1/2 c. chocolate chips

Directions

  1. Mix together; pour into muffin cups. Bake at 375 for approximately 15 minutes.
