Creamy white bean chili

Ingredients

  • 1 lb sausage
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • (2) 15oz cans Great Northern Beans,
  • drained & rinsed
  • 1 1/2 cups chicken stock
  • 4 oz can diced green chilies
  • 1 tsp cumin
  • 1/2 tsp dried oregano
  • 1/2 tsp cayenne pepper
  • 1 cup sour cream
  • 1 cup grated Jack cheese

Directions

  1. Brown sausage, breaking into crumbles. Remove sausage from pan. Cook onions and garlic in grease from sausage until onions are tender and translucent.

  2. In large pot combine all ingredients except sour cream & cheese. Cover & simmer for 1 hour (or in crock pot on low for 4 hours)

  3. Add sour cream & cheese; simmer for another 30 minutes (or in crock pot for 1 hr)
