Chocolate Almond Butter Cookies

I use my cookie press with this recipe, but even without one, these are quick and yummy – slightly dry cookies.

Ingredients

  • 1/2 CUP OF SUGAR
  • 3/4 CUP BUTTER, softened
  • 1 EGG YOLK
  • 1 teaspoon ALMOND EXTRACT
  • 1-1/2 CUPS ALL-PURPOSE FLOUR
  • 1/4 CUP UNSWEETENED COCOA POWDER

Directions

  1. at oven to 375. In large bowl combine all ingredients except flour and cocoa.

  2. Beat at medium speed until light and fluffy (2-3 min.) Gradually add flour and cocoa until well mixed (2-3 min).

  3. Shape rounded teaspoonfuls as desired (1”balls, 2-3” logs, balls flattened, balls with indentations, etc.) Or

  4. use cookie press. At this point you can top with sprinkles or dried cherries, nuts…

  5. Place 1” apart on cookie sheet. Bake for 7-9 minutes or

  6. until set.

  7. Cool. Decorate with melted chocolate, melted almond bark, nuts, colored sugars, candied fruit, candies, cherries, etc.

  8. YIELD 3 DOZEN
