Creamy Corn Soup

Ingredients

  • 2 tbsp margarine or butter
  • 1 small onion, finely chopped (1/4 cup)
  • 2 tbsp all purpose flour
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 2 cups milk
  • 1 can (15-ounces) or 1 3/4 cups cream style corn

Directions

  1. Melt margarine in 2-quart saucepan over medium heat.

  2. Cook onion in margarine, stirring occasionally, until tender.

  3. Stir in flour, salt, and pepper.

  4. Cook over medium heat, stirring constantly, until mixture is bubbly.

  5. Remove from heat. Stir in milk.

  6. Heat to boiling, stirring constantly.

  7. Boil and stir 1 minute.

  8. Stir in corn, heat through.
