Triple Chocolate Brownie Cookies

Ingredients

  • 3/4 cups butter, cubed
  • 4 squares (1 ounce each) unsweetened chocolate
  • 4 eggs
  • 2 cups sugar
  • 1 1/2 cups all purpose flour
  • 1/2 cup baking cocoa
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups (12 ounces) semisweet chocolate chips, divided
  • 2 tsp shortening

Directions

  1. In a microwave safe bowl, melt butter and chocolate; stir until smooth. Cool slightly.

  2. In a large bowl, beat eggs and sugar.

  3. Stir in chocolate mixture.

  4. Combine the flour, cocoa, baking powder, and salt.

  5. Gradually add to chocolate chip mixture. Stir in 1 1/2 cups chocolate chips. Cover and refrigerate for 2 hours or until easy to handle.

  6. Drop by tablespoonfuls 2 inches apart onto greased baking sheets.

  7. Bake at 350 for 7-9 minutes or until edges are set and tops are slightly cracked.

  8. Cool for 2 minutes before removing from pan to wire racks to cool completely.

  9. In a microwave safe bowl, heat shortening and remaining chocolate chips on high for 1 minute or until chips are melted; stir until smooth.

  10. Drizzle over cookies.

  11. Let stand for 30 minutes or until chocolate is set.

  12. Store in an airtight container.
