Oven Pasta With Mushrooms and Cheese, Italian Style

Ingredients

  • 2 tablespoons vegetable oil
  • 1 cup chopped yellow onion
  • 2 garlic cloves, minced
  • 8 ounces mushrooms, sliced
  • 1 (15 ounce) can tomatoes seasoned with basil garlic & oregano, with their juices, chopped
  • 1/2 cup chopped fresh parsley
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4-1/2 teaspoon salt
  • fresh ground black pepper
  • 6 ounces fusilli, cooked and drained
  • 1 cup grated Fontina cheese
  • 1/2 cup grated parmesan cheese

Directions

  1. Heat the oil in a large skillet over medium heat.

  2. Add in onion, garlic, and mushrooms; saute 5 minutes or until tender.

  3. Add in tomatoes, parsley, basil, oregano, salt, and pepper; simmer about 5 minutes.

  4. Transfer mixture to a 2-quart lightly greased casserole.

  5. Add in fusilli and fontina; mix well.

  6. Sprinkle with Parmesan; bake in a 350° oven, uncovered, for about 40 minutes or until bubbly.
