Italian-Style Chicken Skillet

Ingredients

  • 4 small boneless skinless chicken breasts halves
  • 1 onion, halved, sliced
  • 1 red pepper, cut into thin strips
  • 1/2 c. fat free reduced-sodium chicken broth
  • 1/4 c. Tuscan house Italian dressing and marinade

Directions

  1. Heat large nonstick skillet sprayed with cooking spray on medium-heat.

  2. Add chicken; cover with lit.

  3. Cook 5-7 minutes on each side or until chicken is cooked through

  4. Remove chicken from skillet; keep warm

  5. Add vegetables to skillet.

  6. Cook, uncovered, 4 minutes or until crisp-tender, stirring occasionally

  7. Stir in broth and dressing.

  8. Return chicken to skillet.

  9. Cook 1 minutes or until chicken is coated and heated through.

  10. Serve with Brown rice as accompaniment
