Sendik’s Soda Bread

Ingredients

  • 3 cup(s) All purpose flour
  • 3 teaspoon(s) baking powder
  • 1 teaspoon(s) baking soda
  • 1-11/4 cup(s) cold buttermilk
  • 4 tablespoon(s) cold, unsalted butter, cut into pieces
  • 11/2 cup(s) combination golden raisins and dried cherries
  • 1 egg yolk
  • 1 large egg
  • 1/4 cup(s) light brown sugar
  • 1 teaspoon(s) Salt

Directions

  1. Preheat oven to 400F. Combine flour, sugar, baking powder, baking soda and salt. Add butter and cut in with a dough whisk until soft crumbs are formed. Add buttermilk, and eggs. stir until just moistened, then add fruit. Knead gently, sprinkling with flour to prevent sticking. Divide dough into 2 equal portions and place on baking sheet. Slash tops with a large X. Bake 35-40 minutes.
