Zucchini Bread

Ingredients

  • 3 c flour
  • 2 c sugar
  • 2 c grated zucchini
  • 1 c oil
  • 3 eggs
  • 1/2 t baking powder
  • 1 t baking soda
  • 1/2 t salt
  • 3 t vanilla
  • 1 t cinnamon
  • 3/4 t nutmeg

Directions

  1. Mix dry ingredients. Beat Zucchini with eggs, add oil and vanilla. Mix together wet and dry ingredients. Bake at 350F for 1 hour, test.

  2. Double use trivia baking blend equal to 3 c sugar and use applesauce for half oil
