Sponge Cake with Orange Icing

Ingredients

  • 1 1/4 c cake flour
  • 1 c sugar
  • 1/2 t baking powder
  • 1/2 t salt
  • 6 eggs separated
  • 1 t cream of tartar
  • 1/2 c sugar
  • 1/4 c cold water
  • 1 t vanilla
  • Icing
  • Butter-size of one large egg
  • 1 box powdered sugar
  • 1 orange, juice and rind

Directions

  1. Sift together first 4 ingredients. Beat egg whites, sugar, tartar together until stiff. Beat egg yolks, water, vanilla with dry ingredients for one minute. Fold in egg whites. Bake at 350F for 40-50 minutes.
