Green Bean and Shrimp Salad

  • 1 cup(s) Cherry Tomatoes
  • 1 teaspoon(s) Dijon
  • 1/2 cup(s) Feta
  • 2 clove(s) Garlic, pressed
  • 1 pound(s) Green Beans
  • 2 tablespoon(s) Olive Oil
  • 3 tablespoon(s) Olive Oil
  • 1 tablespoon(s) Red Wine Vinegar
  • Salt & Pepper
  • Salt & Pepper
  • 1.5 pound(s) Shrimp, Raw
  • Vinaigrette


  1. Whisk together vinegar, mustard, salt & pepper. Gradually drizzle in olive oil, whisking continuously until dressing is emulsified, set aside.
  2. Add beans to boiling water and simmer 5 minutes until crisp-tender, drain. In a large bowl, toss beans with dressing, set aside.
  3. Heat olive oil in a large skillet over medium heat. Add garlic and shrimp. Season with salt and pepper and cook until shrimp is cooked.
  4. Toss tomatoes, beans, shrimp and feta…serve.
