Fish Ragout

Ingredients

  • 1 Onion, Chopped
  • 3/4-1 cup celery, diced
  • 1 clove Garlic, Minced
  • 3 T olive oil
  • 1 can tomatoes (1#, 12 oz)
  • 1 can tomato paste, 6oz.
  • basil, oregano, bay leaf
  • 1/5 c dry white wine
  • salt & Pepper
  • 2-3 lbs fish(haddock, cod etc)

Directions

  1. Saute onions and garlic, add celery. Add all other ingredients except fish and simmer 1 hour. Add fish and simmer 15-20 Minutes.
