Tortilla Soup

Ingredients

  • 1 T olive oil
  • 1 Large onion, chopped
  • 1 t chili powder
  • 1 t cumin
  • 1 clove garlic, minced
  • 1/2 t oregano
  • 1/4 t cayenne
  • 6 c chicken broth
  • 1 can rotel
  • 1 can diced tomatoes
  • 12 ounces chicken or turkey, either cooked or raw
  • 1 c frozen corn
  • 1 can black beans, rinsed and drained

Directions

  1. Saute onions in olive oil until translucent. Add spices and garlic, stir 1 minute. Add stock and tomatoes. Simmer, add turkey…if raw, simmer until cooked through. Add corn. Serve with cheese and tortilla chips
