Hearty Burritos

Ingredients

  • 1 lb ground beef
  • 1 green pepper chopped
  • 1 onion chopped
  • 1 16-oz package frozen cubed hash brown potatoes, thawed
  • 1 can black beans, rinsed and drained
  • 1 can rotel
  • 1 c frozen corn, thawed
  • 1/2 c salsa
  • 1/2 c cooked rice
  • 2 t chili powder
  • 1/2 t salt
  • 2 c shredded cheddar cheese
  • 8 10-inch flour tortillas
  • Sour cream, chopped tomatoes, guacamole, additional cheddar cheese, salsa

Directions

  1. In a large skillet, cook the beef, green pepper and onion until meat is done, drain. Add next eight ingredients, mix well. Sprinkle about 1/4 cup cheese off center on each tortilla; top with about 1 cup beef mixture. Fold sides and ends over filling.
  2. Wrap burritos individually in foil and freeze for up to 3 months. Or, place burritos seam side down on a baking sheet;bake at 350F for 25 minutes. Serve with condiments.
  3. To use Frozen Burritos: Thaw overnight in refrigerator, bake as directed.
