Santa Fe Rice and Beans

Ingredients

  • 1 can(s) Black Beans
  • 1/4 teaspoon(s) chili powder
  • 2 cup(s) Cooked Brown Rice
  • 1 cup(s) Frozen Corn, thawed
  • 1/4 teaspoon(s) Pepper
  • 1 can(s) Pinto Beans
  • 2 tablespoon(s) reduced fat mexican cheese blend, shredded
  • 3/4 cup(s) reduced fat Mexican cheese blend, shredded
  • 3/4 cup(s) reduced fat sour cream
  • 1 can(s) Rotel
  • 1/4 teaspoon(s) salt
  • 2 tablespoon(s) scallions

Directions

  1. Mix everything together except the last 2T cheese. Spoon into baking dish and sprinkle with reserved cheese. Bake 30 minutes at 350
