Ingredients

  • 16 oz. can black-eyed peas
  • 16 oz. can pinto beans
  • 1 small can shoepeg corn
  • 1 jalapeno pepper (chopped finely)
  • 1 green pepper (chopped finely)
  • 1 red pepper (chopped finely)
  • 1 red onion (chopped finely)
  • 2 cloves garlic (crushed)

Directions

  1. Mix dressing:

  2. 1/3 cup oil

  3. 3/4 cup white vinegar

  4. 3/4 cup sugar (or Splenda)

  5. Chill and serve with favorite crackers
