Aunt Fanny’s Cabin Squash Casserole

Cook time: 60 minutes
Serves 10 people

Ingredients

  • 3 pounds summer squash
  • 1/2 cup chopped onion
  • 2 eggs
  • 1 stick of butter, melted
  • 1/2 cup cracker meal or bread crumbs
  • 1/2 tsp pepper
  • 1 tsp sugar

Directions

  1. Slice squash and boil until just tender and drain.

  2. Put all ingredients in buttered baking dish EXCEPT for 1/2 of butter.

  3. Pour remaining butter on top.

  4. Bake at 375 degrees for 1 hour or until done.
