Cottage Cheese Meatloaf

Serves 6 people

Ingredients

  • 1 lb ground beef
  • 1 cup cottage cheese (I use no fat)
  • 1 egg
  • 1/2 cup quick oats
  • 1/4 cup catsup
  • 1 tablespoon prepared mustard
  • 1 tablespoon instant minced onion
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/3 cup parmesan cheese

Directions

  1. Combine all ingredients except Parmesan cheese.

  2. Mix ingredients lightly till well blended.

  3. Press lightly into an 8 by 8 pan.

  4. Cover with waxed paper & microwave on high for 12 to 14 minutes, turning dish once (if no turntable).

  5. Drain fat, if needed.

  6. Sprinkle top with Parmesan cheese & cook uncovered on high for 1- 2 minutes or till cheese melts.

  7. Let stand 5 minutes before serving.
